I need something for my coffee eh!
INGREDIENTS:
280g all purpose or whole wheat
1 tsp baking powder
salt
120g sugar
zest of lemon peel
zest of orange peel
vanilla
3 eggs (150g)
Play around with these additions:
walnut apricot white chocolate
pistachio cranberry almond
fig pecan cinnamon
whatever you got on hand
ok here we go
mix flour, baking powder and salt. set aside.
rub zest into sugar. add vanilla. then whisk in eggs on high, 4-6 min until light and creamy. the fluffier the better
mix in flour & additions. form sticky dough
shape into 2 logs on a parchment lined sheet
chill 10-20 min\
bake 350F, 16-22 min.
pull out of oven. let cool 25%, then slice cookies
line again on sheet for 3-4 min
enjoy with your coffee
