IN THIS RECIPE:

  • spelt, rye, or whole wheat flour

  • cocoa powder

  • salt

  • water

  • starter

  • egg

  • chocolate protein powder

  • baking soda

  • vinegar

Mix flour, cocoa, salt in a small bowl.

In a litre container, mix active starter + water and froth with a fork.
whisk in the egg, and some vanilla if you’d like.

Mix in the flour, then the protein powder. (adjust scoops to preference)

In a separate small bowl, mix baking soda + vinegar, let bubble as you
mix into batter.

cook with a bit of butter, or coconut oil. mid-high heat, adjust.


(I like to make a big thick one the size of a small pan.
cover it with a lid so it steam bakes for about 4-6 minutes, then 2 min without the lid. Flip the pancake over, cover again with lid, and steam for 4 more minutes, then 3-4 min without lid. low/medium heat. )
